Ingredients
  

  • 2 cups strawberries, hulled and quartered
  • 2 cups seedless grapes (red or green), halved
  • 2 cups pineapple, cut into bite-size chunks (fresh or well-drained canned)
  • 2 cups watermelon, cut into small cubes
  • 2 kiwis, peeled and sliced into half-moons
  • 1 cup blueberries
  • 1 small mandarin orange, peeled and segmented (or 1 cup canned mandarins, drained)
  • Fresh mint, a few leaves chopped (optional, for garnish)
  • 2 tablespoons honey (or maple syrup for a vegan option)
  • 1 tablespoon fresh lime juice (about half a lime)
  • 1/2 teaspoon lime zest (optional but bright and tasty)
  • Pinch of salt (just a tiny pinch to balance sweetness)

Method
 

  1. Wash and prep your fruit. Rinse everything under cool water. Pat dry so extra water doesn’t water down the salad. Cut into kid-friendly, bite-size pieces.
  2. Make the dressing. In a small bowl, whisk honey, lime juice, lime zest, and a tiny pinch of salt. It should taste bright and lightly sweet.
  3. Combine the sturdier fruits first. Add grapes and pineapple to a large bowl and toss gently with half the dressing. This helps keep the fruit juicy and flavorful from the start.
  4. Add the softer fruits. Gently fold in strawberries, blueberries, kiwi, watermelon, and mandarin segments. Use a soft spatula to avoid crushing.
  5. Taste and adjust. If you want more zing, add a splash of lime. If it needs sweetness, drizzle a touch more honey.
  6. Chill briefly. Cover and refrigerate for 15–30 minutes. This helps the flavors come together without breaking down the fruit.
  7. Garnish and serve. Sprinkle chopped mint on top right before serving. Pack into a lidded container for a picnic or serve in small cups for easy kid portions.
