Make the mango base: Blend mango until smooth.
If you don’t have a blender, mash it well with a fork until mostly smooth.
Stir the liquids: In a mixing bowl or large jar, combine the milk, mango puree, vanilla, sweetener (if using), and a pinch of salt. Whisk until it looks even and creamy.
Add chia seeds: Sprinkle in the chia seeds while whisking to prevent clumps. Keep whisking for 30–45 seconds until evenly distributed.
Rest and re-stir: Let the mixture sit for 10 minutes, then whisk again.
This second stir helps the chia absorb liquid evenly.
Chill: Cover and refrigerate for at least 2 hours, or overnight for the best texture. It should thicken to a pudding-like consistency.
Serve: Give it a quick stir. Spoon into bowls or small jars and top with diced mango, coconut, or a dollop of yogurt.
