Ingredients
  

  • 6 chicken thighs (bone-in, skin-on for crispy skin, or boneless, skinless for leaner)
  • 2 tablespoons olive oil (or melted butter)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon sweet paprika (not smoked; mild and kid-friendly)
  • 1/2 teaspoon dried oregano or Italian seasoning (optional)
  • 1 tablespoon honey (optional, for a light glaze)
  • Lemon wedges, for serving (optional)

Method
 

  1. Heat the oven: Preheat to 425°F (220°C). Line a sheet pan with foil or parchment for easy cleanup. Set a wire rack on top if you have one for extra-crispy skin.
  2. Pat dry: Use paper towels to dry the chicken well. Dry skin = better browning and crispiness.
  3. Mix the seasoning: In a small bowl, combine salt, pepper, garlic powder, onion powder, paprika, and oregano (if using).
  4. Coat the chicken: Rub the thighs with olive oil. Sprinkle the seasoning evenly on all sides. If using honey, drizzle a thin line over the top and spread lightly.
  5. Arrange: Place thighs skin-side up on the prepared pan, leaving space between pieces for even heat and airflow.
  6. Bake: Cook for 25–35 minutes, depending on size and cut. Boneless thighs usually take 20–25 minutes; bone-in may need 30–35. Cook to an internal temperature of 175°F (80°C) for thighs for the most tender texture.
  7. Optional broil: For extra-crispy skin, broil for 1–2 minutes at the end. Watch closely to avoid burning.
  8. Rest and serve: Let the chicken rest for 5 minutes. Serve with lemon wedges, rice, steamed veggies, or a simple salad.
