Prep the fruit. Rinse berries and pat dry. Slice strawberries or large berries into bite-size pieces.
If using banana, slice just before assembling to prevent browning.
Sweeten the yogurt (optional). In a bowl, stir coconut yogurt with a small drizzle of maple syrup and a drop of vanilla. Taste and adjust. Keep it mild; berries will add sweetness too.
Boost with seeds (optional). Stir in 1 teaspoon of chia seeds or ground flax per serving for fiber and healthy fats.
Layer in clear cups or jars. Start with 2–3 tablespoons of yogurt, then add a layer of berries, then a sprinkle of granola or crushed cereal.
Repeat the layers until you reach the top.
Add finishing touches. Top with a few extra berries, a pinch of shredded coconut, and a bit of lemon zest for brightness.
Serve right away for crunch. If packing for later, keep the crunchy topping separate and add just before eating.
